Shroom Dog with
Red Onion Pickle


(Serves 2)

Red onion pickle :

  • 2 red onions peeled and very finely sliced

  • Juice of 1 lemon

  • 1 tablespoon of rice vinegar

  • Good pinch of salt

  • 1 tablespoon of sugar

Method :

Rinse onions in warm water for 2/3 minutes.

Mix all the other ingredients in a bowl and add the onions - leave to pickle for 20 minutes stirring 3 or 4 times.

Serve pickle with cooked, BBQ’d or griddled Shroom dogs in a hotdog bun with mustard and ketchup!
